Reflecting nature's palette and celebrating its abundance, plus the power of a truly remote stay.
The second stop on our Highland holiday was the northernmost place I’ve visited in Scotland as we stayed in Tongue, Sutherland. I don’t think I’ve ever driven through such beautifully barren scenery, or felt so far from my day to day - in the best way possible. This far North, the bracken was already turning shades of russet and brown in August, filling the moors alongside dusky purple heather. Once again, natural inspiration was all around, and the interiors and food - so much wonderful food - echoed and epitomised the land in its harvest abundance. Let me take you with me…
