Beltane marks the beginning of the shift towards Summer abundance in the kitchen. The “hungry gap” is losing its grip here in the UK, with some notable seasonal stars emerging whose micro seasons mark the start of sunshine flavours for me. Ingredients such as asparagus, peas and new potatoes offer a taste of the lighter notes of the warmer seasons to come. Here’s a list of ingredients that are in season over this six week period from the start of May to mid-June, and some ideas for what to make with them, including a favourite recipe for no-churn ice cream and my strawberry and rose shortcakes.
