Happy Summer Solstice to those of you in the Northern Hemisphere! Today is Litha, the longest day and shortest night (or conversely, the shortest day and longest night in the Southern Hemisphere). This is high Summer - a time to be outdoors as much as possible, to stop and smell the roses, and to embrace seasonal ingredients like strawberries, cherries and peaches. I’ve been celebrating Litha in small ways - arranging Summer posies with the first flowers from our wee pot garden, lighting a special candle and enjoying the first Summer cherries and doughnut peaches. I roasted some of the latter that were underripe and made some no-churn ice cream that’s currently in the freezer setting, but I think the rest will have to be made into this beautiful peach, amaretti and vanilla cake again as I haven’t stopped thinking about it since I first baked it… A perfect easy bake to share together and enjoy this Solstice weekend.
