Something about this time around Beltane has me dreaming of picnics - in fact, there’s a whole section of picnic recipes in my book, and it was one of my favourite parts to write! Ideally, I’d pack a basket with each and every recipe in there to enjoy under the last of the cherry blossom or in the bluebell woods, but these days even the simplest of picnics - a fresh cake or pastry and a flask of tea or coffee - are treat enough for me. You can’t beat a traditional scone with cream and jam served with Earl Grey tea, but every now and then I like to mix it up with seasonal flavours, and for this recipe experimented with combining the tea and the fruit together in the scone - and the results were very delicious indeed!
