In my mind, the lead-up to Litha is synonymous with one distinctly floral ingredient: elderflower. Foraging for the creamy white, sweet-smelling blooms has got to be one of the great joys of late May and early June. Picked on a sunny morning, it’s foraging mindfulness at its most sensory. To celebrate the peak of elderflower season here with the Summer Solstice on its way, I thought I’d share a recipe that celebrates the flowers, a wee bit of elderflower folklore and some foraging tips in today’s post.
