A comforting seasonal dessert for cold Winter days 🍊

At this time of year in the lead-up to Imbolc, especially on very cold days like we’ve had here in Edinburgh this week, I find myself craving comfort food in the form of warming soups and stews followed by nostalgic puddings. The kind of old-school desserts that you might have had at your grandparents’ house, a hug in a bowl that warms you from the inside out. Traditional flavours often feature, and custard, cream, or ice cream - or even all three, no judgement here - are a must to accompany. This week I had a jar of open marmalade in the fridge leftover from recipe testing and it was just calling to me to make something indulgent for these dark January days. Enter this marmalade chocolate pudding: the sponge has a depth of flavour and caramelised notes from the marmalade and brown sugar, with chunks of melting chocolate.
