This week was Beltane and I don’t know about you, but I’m filled with anticipation for the season to come. From all the beautiful flowers coming into bloom - peonies and lily of the valley being two of my favourites, all the more beautiful for their fleeting presence - to the promise of all the gorgeous, seasonal produce that’s just starting, like asparagus and new potatoes, light and warmth are gradually building and the growing season is gathering pace. To celebrate Beltane and floral season I thought I would share a recipe for my favourite brownies, given a flowery twist for this, the very beginning of the Summer seasons in the Celtic Wheel of the Year.
