The festive season is - probably more than any other time of year - all about ritual and tradition, especially in the kitchen. One of my favourite baking traditions as November turns into December is baking seasonal shortbread, prompted by the celebration of St. Andrew’s Day every year. This year’s recipe is for chocolate and peppermint shortbread, with buttery, crumbly shortbread biscuits richly flavoured with cocoa and sandwiched and topped with a fresh flavoured peppermint icing. I love chocolate and mint together, especially at Christmastime, but if you’re not a fan you could leave out the peppermint or add orange or clementine zest to your dough and icing instead.
