For today’s recipe I’m sharing a rich, chocolatey twist on the traditional Basque cheesecake. If you’ve not tasted one before, it’s basically a crustless cheesecake that’s purposefully burnt so it has a beautifully caramelised top and a soft, creamy filling beneath. It characteristically sinks in the middle and is somehow both deliciously light and moreishly rich. With Easter on the horizon, I thought I’d add chocolate to proceedings to make it even more decadent for Spring celebrations, not to mention helpful for using up leftover chocolate (if there is such a thing…) It’s surprisingly simple to make but looks - and most importantly tastes - impressive.
