Strawberry and Rose Shortcakes
A seasonal recipe to celebrate Beltane and other things I've been making in the kitchen this month!
Monday is Beltane, the start of the Summer seasons in the Celtic Wheel of the Year. Simultaneously, here in the UK the hungry gap between the end of the Winter produce and the start of the Spring seasonal ingredients is finally coming to an end, so I thought I’d share a celebratory recipe for Beltane to spotlight the first of the new season ingredients - strawberries! I had my first Scottish strawberries this week and my goodness they were worth the wait. This recipe sees strawberries sandwiched between buttery, crumbly spelt shortcake biscuits and filled with rose-scented whipped cream - a herald of all the seasonal goodness to come.
