This last week it seems that nature is positively bursting into life here in Edinburgh. Our shared garden in particular is having a weed bonanza - so a spot of meditative weeding is definitely on the cards for my long weekend… However, it did get me thinking about how we define weeds, and reaching for my foraging books to check a few plants, then feeling rather hungry. As well as some new discoveries I detail below, I’ve been experimenting with the oft-overlooked, prolific stinging nettle - which is surprisingly delicious and versatile in both savoury and sweet Spring dishes. Here’s what I’ve been making with nettles in my kitchen, as well as some other foraging gems I’ve spotted in our new tenement garden.
